Pumpkin Spice IsoFemme Protein Muffins
These delicious Pumpkin Spice Muffins make a great seasonal treat. A perfect healthy breakfast for those always on the go! Make a large batch and store in the fridge or even freeze a portion for later!
Ingredients
- 1 Cup Oatmeal
- 1 Banana (mashed)
- 1/4 Cup Almond Flour
- 1/2 Cup IsoFemme Vanilla Protein
- 3 Egg Whites
- 1/2 Cup Plain Greek Yogurt
- 1 Cup Pumpkin Puree
- 2 Tbsp Sweetener
- 1 1/2 Tbsp Pumpkin Spice
- 1 Tsp Vanilla Extract
- 1 1/2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/4 Tsp Salt
- Handful Pumpkin Seeds
Preparation:
- Preheat oven to 350°.
- In a blender, pulse all dry ingredients together.
- In a bowl combine all wet ingredients. Fold dry ingredients into the wet ingredients until smooth.
- Place liners in a muffin pan and fill each cup 3/4 of the way full.
- Add a few Pumpkin seeds to the top of each muffin.
- Bake for 20 minutes.
- Allow to cool.
